It's not easy going vegan, it can take a few attempts to switch to a completely plant-based diet.

I've put together some of my favourite vegan recipes that anyone can cook at home.

One of the main issues is time and basically not knowing where to start. Going vegan does not have to mean that you have to submit to boring tasteless meals three times a day.
Vegan Shepherds Pie.
Serves 4 to 5 People:
Beautifully tasty and comforting. Here's our plant based version of a shepherds pie, you could call this a, "Gardener's Pie".
Just a note; the jalapeno is optional. I just like my food with a bit of a kick.
Ingredients Needed.
1kg (2.2lbs) Sweet Potatoes
250g (0.55 lbs) of Mushrooms
30g (0.07 lbs) of Dairy Free Butter or Margarine
3 tins of Kidney Beans
1 Onion
2 Carrots
3 Cloves Of Garlic
1 Jalapeno Chili (if you want a little bit of a kick).
8 baby tomatoes
Olive Oil
Sea Salt (or table salt).
Ground or Cracked Black Pepper
Dried mixed herbs
Tumeric
Paprika
Cinnamon Vegan Red Wine (Preferably Merlot)
Method:
1. Pre-Heat the oven on 200°C/400°F/gas 6.
2. Wash, peel, and chop the sweet potatoes into chunks of about 2cm (0.8 inches).
3. Wash, peel and chop 1 carrot into similar chunks.
4. Add cold water and salt to a large pot and bring to boil. Then simmer for 5 mins.
5. Add the chopped sweet potatoes and carrot to the large pot and simmer for 15 mins ( or until soft).
6. Drain the pot and leave the sweet potatoes and carrot to dry out a little (leave for approximately 2 mins after draining).
7. Return to the sweet potatoes and carrots and add 30g (0.07 lbs) of dairy dairy-free butter or margarine.
8. Mash until smooth.
9. Add Tumeric, Black Pepper, and 1 teaspoon of cinnamon to the mash.
10. Mix the sweet potatoes and carrots with a wooden spoon until all the spices are blended together and then set the pot aside.
11. Roughly chop the mushrooms and jalapeno into small pieces.
12. Peel and chop 3 garlic cloves, and set one garlic clove aside (for later).
13. Peel and dice the onion.
14. Wash, peel, and grate the other carrot.
15. Empty the tins of kidney beans into a bowl and mash them until mushy.
16. Place a frying pan on the hob and turn to low heat.
17. Add a couple of splashes of vegan red wine (50 ml (1.8 ounces) to the pan.
18. Add a sprinkle of mixed herbs, paprika and black pepper to the wine in the pan.
19. Add the mushrooms, onion jalapeno, 2 garlic cloves, grated carrot, and mashed kidney beans to the frying pan.
20. Turn to medium heat. Stir and cook for 10 minutes or until the mixture has thickened, adding more black pepper on top if you like.
21. Add the frying pan mixture to a baking dish.
22. Wash and Chop 8 baby tomatoes and add them to the mix.
23. Drizzle olive oil over the mix.
24. Spread the mashed sweet potato and carrot over the mix in the baking tray using the back of a wooden spoon.
25. Sprinkle the chopped garlic clove you set aside on top of the mash.
26. Sprinkle mixed herbs and drizzle olive oil over the mash, and then lightly flick the mash upwards with a fork.
27. Place in the hot oven for about 10 to 15 minutes or until piping hot.
Serve with steamed vegetables.
